The perfect dish to serve that everyone is able to enjoy. True to the French classic, the ratatouille is a sautéed mixture of eggplant, zucchini, tomatoes and onions, and topped with fresh basil. The roasted acorn squash is both sweet and rich. Paired together it makes for a warm, comforting, satisfying entree that is both vegan and gluten free.

Roasted chilled beef tenderloin cooked to medium, with fresh horseradish sauce on the side. Leave tenderloin out at room temperature, or cover for one hour to warm up a bit.
You may serve it now, as is, at cool room temperature, with rolls and condiments. If you prefer, the tenderloin can be warmed in a pre-heated oven for 15-30 minutes, depending how well done you would like to serve it. Tent with aluminum foil, rest five minutes then slice and serve with horseradish sauce.
